Chia Pudding

Ingredients

  • 1.5 cups coconut milk
  • 4 tbsp chia seeds
  • 2 tbsp maple syrup 
  • 1 tbsp of THRYVE Gut-Brain Superblend
  • 1 tbsp cocoa powder
  • Pinch of salt
  • 1/4 tsp cinnamon
  • 1 tsp vanilla bean paste
  • Drizzle of maple syrup
  • For toppings: shaved chocolate, hazelnuts, cacao nibs, puffed quinoa

 

Directions

  1. Add coconut milk, chia seeds, maple syrup to a glass or jar and stir thoroughly
  2. Wait 2 minutes for your pudding to thicken slightly, then stir again
  3. Separate pudding into 3 small bowls
  4. In bowl 1, add 1 tbsp cocoa and mix together
  5. In bowl 2, add 1 scoop of THRYVE powder and then add 1 tbsp of your cocoa from bowl 1 into bowl 2 for colour. Mix together
  6. In bowl 3, add 1/4 tsp of vanilla bean paste, and mix together
  7. Cover all 3 bowls and refrigerate for 2-3 hours
  8. Grab 3 small glasses and add a layer of cocoa chia to all 3 glasses
  9. Add a layer of your Thryve chia pudding
  10. Add a layer of your vanilla chia pudding to each glass
  11. Optional: add a layer of coconut yoghurt to the top of each glass
  12. Top with shaved chocolate and/or fresh berries.
